Tuesday's Dinner

Arugula Salad with Vine Ripened Tomatoes and a Blood Orange & Olive Oil Dressing and fresh cracked pepper!

Look familiar? Did not feel like cooking tonight even though I hate leftovers! So, tonight I added a twist, sauteed shallots and an avocado. This time of the year is the beginning to the best season for food ... succulent blackberries & raspberries with fresh cream - for dessert! And, of course, a nice glass of wine!

My boyfriend is out of town. I have to admit, I do get a bit lazy when he is gone as you will be able to tell from tonight's meal! Left over corn tortilla with melted cheese, some left over Eggplant Salsa and a nice glass of my favorite everyday table wine!

We started the evening with Blood Orange Margaritas, Organic Corn Tortillas w/an Eggplant Salsa - we are crazy for Eggplant right now! Next we moved to a Vegetarian Enchilada with a roasted tomatillo chiptole sauce. I have to say, the veggies were cooked just enough with alittle crunch & the sauce had a nice bite of spice with an under tone of smokiness. Went nicely with the Margaritas! Dessert ~ Zest of Blood Orange madelines dipped in a semi-sweet Scharfenberg Chocolate. Time to hit the couch with a bit of Port and a good movie ... Now, what restaurant offers that type of service!
