Chicken Cutlets

We had a meal over at our friend's L. & P's house, while we were back east that was really fantastic, not only the company but the food. L. made a beef stew that was light and flavorful for the adults and then she breaded some chicken cutlets and fried them, for the kids. We are not big fans of fried food; but, these cutlets were outstanding and we could not stop eating them! So simple, too! She tossed them in flour and egg and then rolled in bread crumbs and panko and fried them up in olive oil. These little fried cutlets have been on our minds for days now, so we hit the market and picked up some chicks! I did not have any flavored breadcrumbs laying around so I crushed leftover croutons from last night and mixed with the panko. As well I tossed in some Italian flavored salt into the flour.

I made a light butternut squash risotto with caramelized shallots and garlic folded in. Went nicely with the chicken cutlets and a nice bottle of white wine!

Thanks, L., for introducing us to some good "fried" food! This will become a staple in our house!!!

Frisee Salad

We are back. Back in our cozy little house! Back to eating delicious meals with you all!

While we love being away visiting the family in Boston and eating wonderful meals twice a day, we definitely start looking forward to our simple life and good living on the W. Coast. We came home to crazy rain storms and decided it would be nice to pick up a few bottles of wine and enough food to last us a couple days and to just hunker down at home - food, wine, movies, being lazy on rainy days and reconnecting for the New Year! With one exception of dining at Delfina on Saturday night - CAN NOT wait for that!

Our first meal was one of our favorites - Frisee Salad with a warm bacon dressing and poached eggs, crusty loaf of bread, a hunk of blue cheese and a bottle of Chateauneu de Pape - Can not come up with a better way to bring in the new year!
