Veggie Lasagna

We are back on the local train. While it was great having L.'s mother cook Portuguese food for us for a week we are both happy to be eating Local & Organic again! Made one of our favorite dishes today ... Grilled Veggie Lasagna sitting in a pool of Basil Oil, the recipe is one of Emeril's and it is - YUMMY!

I love reasted vegetables and that looks like a gorgeous lasagna. Only thing is I don't like eggplant and most roasted vegetables recipes include it. I make mine with squash and onions and all colors of peppers and carrots. Mmmmm.

Great Idea for a nice fall lasagna. Just got one of the first squash yesterday, looking forward to a chilly night to cook it!
